I remember my Grandma used to boast her "Dininding" when I was still young and growing up with her influence in the kitchen, I decided to finally try it now that I have a son whom I always boast (TOO!) to be fond of eating just about any kind of vegetables around..YES, I hear you yell..including AMPALAYA!! :) My son is a two-year old half- blooded Ilonggo..and well, the other half, Ilocano...Down with that eyebrows!hahaha..
VEGE eaters!TRY THIS!
DININGDING NI LOLA
1 cup sweet corn (fresh or in can)
salted dried shrimps (a pack or two)
okra (about 6-8 pcs)
ripe tomatoes, MEDIUM size (about 6 pcs)
Calabasa leaves (ewan anong English term nyan) :) (INCLUDE STALKS pls..it's chunky!
Dahon ng Sitaw
1/2 Cup Fish Sauce (BAGOONG po!!)
onions (1 MED. SIZE)
garlic (1 clove or 2 cloves will do), crushed
Boil at least 3-4 cups of water together w/ the sweet corn,onion,tomatoes and salted dried shrimps.
When (fresh) sweet corn is tender,add this consecutively: okra and boil for at least 1-2 min, calabasa leaves' stalk (bring to boil for few secs lang po),dahon ng sitaw and calabasa leaves(don't overcook!)
Add fish sauce and garlic.
